While several “Shark classics” remain on the menu at all times, chefs Travis Wright and Nate Britko are constantly creating exciting new menu items from the locally grown organic produce and locally caught seafood sourced from the commercial harbor. Wright and Britko insist on utilizing fresh, local and organic ingredients and preparations, but offer a contemporary approach that often incorporates flavors from around the world.
-Whenever possible we use organic produce, grains and dairy products.
-Our steaks are all natural Certified Angus Beef. The cattle are never given any antibiotics or hormones and have a strict vegetarian diet of all natural feeds and forages.
-Our organic chicken is raised in Pennsylvania’s lush countryside by a select number of family farms. Their leisurely lifestyle includes plenty of fresh air and an all vegetable diet free of antibiotics and hormones.
-Our all natural Duroc pork is housed in a comfortable setting to ensure good health and quality growth, fed a rich diet of natural grains and feeds with absolutely no added growth hormones or antibiotics.
-Whenever possible our seafood comes from the docks right here in the harbor. We get scallops, tuna, Mako, rockfish (striped bass), swordfish, flounder, lobster, gray tilefish, Mahi-Mahi and clams from our harbor docks.
-All of our fish is wild caught, not farm raised.
-Our shrimp are all domestic and wild caught from the gulf of Mexico.
-Our colossal crab meat comes from Handey, a company located in Crisfield, MD.
-We buy produce from Quindocqua farms. A local organic farm located in Marion Station, MD. We also work with a farmer in Berlin, MD that plants organic produce specifically at our direction.
-We grow fresh herbs right here on the property for use in our dishes.
-Our dinner bread is a delicious and healthy multi-grain batard.
-Our eggs are cage-free and organic.
-Our chips are all natural and cooked in house.
-Our Panini bread is all natural.
-Our fry oil is a blend of canola and vegetable and is zero trans fat. 100% of it is recycled into biofuel!
-We buy our cheeses and ice cream from Chesapeake Bay Farms (Worcester County's only dairy farm). We also often feature all natural beef from them (raised on grass and without any hormones or antibiotics).
-We feature many organic and sustainable beer, wine and liquors; including our entire line of house wines.
-A portion of the proceeds from our Rain Forest line of rail liquors goes towards preserving the South American rain forests.
